Scott's Experience: After graduating from Marshall University with my M.S. in exercise physiology I headed west to Colorado, starting my career as the Head Of Sports Performance for the HIT Center. After the first year I went off on my own and have since worked over 13,000 one on one sessions with athletes of all levels and backgrounds including Olympic level athletes, professional athletes, adaptive athletes, youth, recreational, and lifestyle athletes!
Scott's Coaching Philosophy: The science of exercise and the art of coaching combined with the evolved belief that everyone is an athlete drive the coaching and development of every athlete I work with. Don't think you are an athlete? It's my goal to teach and train you otherwise.
Scott's Personal Summary: I moved to Colorado the month after I received my Masters Degree and haven't budged. I found my wife sitting next to me on a chairlift on a powder day in Breckenridge chomping on a blueberry pancake. We did 7 weeks in SE Asia for our honeymoon, and now have two amazing boys. Apex Nutrition Podcast Show Page
Kelli keeps it quick, tasty, and helpful for you. She makes a slow cooked oatmeal that you're going to need to try. A great option for your new Instant Pot! (What?? You don't have one yet??) and for those who may not have the time to get something good on the table in the morning.
Here is the recipe:
Grain Mix Ingredients:
- 1 cup steel-cut oats (gluten-free if desired)
- 2 large apples, cored and chopped
- 1. 5 cups unsweetened non-dairy milk
- 3 cups water
- 2 teaspoons cinnamon
- 0.25 tsp salt
- 2 Tbsp coconut oil
- 1 tsp vanilla extract
- 4 Tbsp hemp seeds (or if you don’t have these, omit, and add 1 more Tbsp oats)
- 4 Tbsp chia seeds
- 2 Tbsp real maple syrup or organic or local honey
Instructions
- VERY IMPORTANT: Grease your slow cooker with coconut oil, butter, or an oil spray. Don’t skip this step or your oatmeal will stick and burn to the sides.
- Place all ingredients in your slow cooker, cover, and cook on low 7-8 hours.
- Once cooked, stir well and serve. Add more milk, pecans, maple, honey, apples, etc. if desired (but delish as is). You can also serve alongside Greek yogurt to boost protein or use as a recovery, see below.
- Can be stored in refrigerator 3-4 days, simply reheat in microwave or stovetop.

When Griff recorded a video of him attempting to clean a difficult boulder and posted it to the Mountain Bike Skills Network (MTBSN) community, the feedback he got jumpstarted his thinking about the importance and attraction of sessioning, something he did constantly in his previous life riding mototrials. It deepened a few days later when he went indoor rock climbing. And by late summer, inspired by a club in the state of Virginia, the MTBSN Sessionistas group was formed.

About Scott Jones
Scott's Experience: After graduating from Marshall University with my M.S. in exercise physiology I headed west to Colorado, starting my career as the Head Of Sports Performance for the HIT Center. After the first year I went off on my own and have since worked over 13,000 one on one sessions with athletes of all levels and backgrounds including Olympic level athletes, professional athletes, adaptive athletes, youth, recreational, and lifestyle athletes!
Scott's Coaching Philosophy: The science of exercise and the art of coaching combined with the evolved belief that everyone is an athlete drive the coaching and development of every athlete I work with. Don't think you are an athlete? It's my goal to teach and train you otherwise.
Scott's Personal Summary: I moved to Colorado the month after I received my Masters Degree and haven't budged. I found my wife sitting next to me on a chairlift on a powder day in Breckenridge chomping on a blueberry pancake. We did 7 weeks in SE Asia for our honeymoon, and now have two amazing boys. We are both born with a passion for moving, adventure, and getting others excited about these things! I just started a more personal Instagram feed if ya wanna stalk me a bit before hiring me!
